Quebec, which accounts for about 90% of Canada’s maple syrup production, says its strategic reserve of 218,000 barrels will be completely empty by February. Americans bought large quantities of Canadian syrup ahead of Donald Trump’s tariffs, pushing exports up 16% last year while production fell 5%. The reserve will not be able to ease fluctuations in output, which depends heavily on weather conditions and can be volatile. Canada produced more than 75% of the world’s maple syrup in 2025, and the market is expected to remain well supplied for the coming year, although the reserve will need to be replenished over the next few years.
